I had no idea what I was going to do with them.
Knowing I didn't want them to go to waste, I got out my handy dandy Ball Blue Book Guide to Preserving to see how to can them.

Here's what I did:
- First I peeled the pears.
- Because I was being lazy, I didn't cut the pears in half and core them like the directions said. I just cut the pear around the core.
- I let them sit in a lemon water bath, to help prevent them from browning.
- I made a light syrup to use in the jars. (1 1/4 cup sugar to 5 1/2 cups water)
Remove the pears from the lemon water bath.
Cook the pears in the syrup until heated through.
Pack the pears into hot canning jars.
Cook the pears in the syrup until heated through.

Pour hot syrup over pears, check for air bubbles, and leave adequate head space.
Put lid and ring on each jar.
Using a boiling water canner, process quarts for 25 minutes.

ReplyDeleteMy boy loves pears and they are his fruit of choice through the fall and winter months. Is there any way to can these without using sugar?
ReplyDeleteIf the pears are sweet enough you could just use water.
