Lemonade Ice Cream Pie


 If you love a refreshing glass of cold lemonade, you are going to love this lemonade ice cream pie!
It is so cool and refreshing.


The hardest part of making this pie is waiting for it to firm up in the freezer. (smile)


For the graham cracker crust, you can either use already made store bought or make your own.

Graham Cracker Crust Recipe
1 1/2 cups crushed graham crackers (24 graham cracker squares)
1/4 cup sugar
1/3 cup butter, melted
Combine the graham cracker crumbs and sugar.
Add melted butter and mix together well.
Press on the bottom and up the sides of an ungreased 9 inch pie pan.


Lemonade Ice Cream Pie Recipe
1/3 cup Country Time lemonade
1/2 cup cold water
2 cups vanilla ice cream, softened
8 oz. Cool Whip

Stir together Country Time lemonade drink mix and water until dissolved.
Add softened ice cream.
Beat with electric mixer on low until well blended.
Gently fold in Cool Whip.
Freeze until the mixture is thick enough to mound into the crust (about 10 minutes)
Spoon into the graham cracker crust.
Freeze the pie at least 4 hours or overnight.
Remove from freezer and let stand at room temperature for 5 minutes so it can easily be cut.
Store left over pie in the freezer.

As delicious as this pie is, it is not something you can easily take somewhere...it would melt too fast.


I think the next time I make this, I will add some lemon zest.
