Pumpkin Cookies that taste like a pumpkin pie...yes, please!
I added homemade whipped cream, sweetened with a bit of powdered sugar for the 'icing'.
I love the smell and taste of nutmeg, so I added it to the cookie batter and sprinkled it on top.
I used canned pumpkin for these cookies, but if you made pumpkin puree, that would be wonderful in this recipe.
Pumpkin Cookies
makes about 2 1/2 dozen cookies
2/3 cup white sugar
2/3 cup brown sugar
3/4 cup butter, softened
1 teaspoon vanilla
15 ounce can pumpkin
2 eggs
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 1/4 cup flour
Pre heat oven to 375 degrees F.
In a large bowl, beat white and brown sugars, butter, and vanilla with electric mixer.
Beat in pumpkin and eggs until well combined.
Mix in baking soda, cinnamon, and nutmeg.
Slowly add the flour.
On ungreased cookie sheets, drop dough by heaping tablespoons.
Bake 10 to 12 minutes.
Cool on a cooling rack.
