Yep...no pectin!
This is a great way to store up some of that delicious fruit.
You can use is on so many things...
toast
ice cream
pancakes
peanut butter
cakes
pies
oatmeal bars (will share recipe this week)
I use a potato masher for many things in my kitchen...potatoes are actually the least thing it is used for.
A potato masher mashes those delicious strawberries, while maintaining a few desired chunks.
Bring a mixture of strawberries and sugar to a boil,
Continually stir and let boil for an additional 10 minutes.
Then you add some bottled lemon juice and let cool.
It's that easy to create strawberry jam!
Strawberry Freezer Jam (without pectin)
makes 3 half pint jars
4 cups halved strawberries
2 cups white sugar
2 tablespoons bottled lemon juice
Hull strawberries and cut in half enough to make 4 cups.
Mash with a potato masher to desired consistency.
Stir in sugar.
Heat to a boil, continually stirring.
Continue to stir and allow to boil for 10 more minutes.
Remove from heat.
Add 2 tablespoons bottled lemon juice.
Let cool.
Transfer to a covered container and store in the fridge overnight. (This helps it firm up.)
Add to freezer jars leaving a little head space.
If you lucky enough to have some extra strawberries, put some in the freezer...they make great smoothies!
