Pimento cheese is something that I have never liked.
Until...
I made it homemade.
That stuff you buy at the store is, well...
gross.
My husband likes pimento cheese and I would buy it to pack as a lunch box item for him.
I know, I know...hold the applause ;-)
Well, in my stretch of trying more homemade items for my family, I came across a basic recipe for pimento cheese and just had to try my hand at making it...with my own twist of using the juice of the pimentos.
Truth is, as I was making it one time I forgot to drain the juice off the pimentos. I thought 'Oh no, it's going to be too runny, too salty, too pimento-ey', but it made it AMAZING! I love the extra zip and creaminess that it adds, and will forever add the pimento juice.
I am now a fan of pimento cheese, homemade of course. And if you've been following my cooking style, you know that most of my recipes are easy to make and use common ingredients. (I try to keep pimentos stocked in the pantry now.)
Here's the recipe:
Homemade Pimento Cheese
8 ounces sharp cheddar cheese, shredded
4 ounces pimentos (do not drain)
3/4 cup mayonnaise
Stir all together and enjoy!
*I have also made this with shredded onion, but I really prefer this basic, classic recipe.*

I never thought of this. Like you, I don't like the store-bought stuff. This sounds really good--thanks for the good idea.
