How do you like your strawberries?
My favorite way to eat strawberries other than just plain, is strawberries with milk and sugar...and some crumbled short cake on top.
But, I got a little creative recently when my daughter had some friends over. I wanted to have something kind of healthy for them to snack on.

Like most things that I make, these were easy to pull together and I had the ingredients on hand.
We live in the country, so a quick run to the store is not in my favor when I get the itch to make something out of the ordinary.
Ingredients:
1/4 cup vegetable oil
1/2 cup milk
1 egg
1/2 teaspoon salt
1 3/4 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar (plus extra for sprinkling on top)
zest of one lemon
1 1/2 cup chopped strawberries
Directions:
Pre heat oven to 375 degrees F.
In a small bowl, combine oil, milk, and egg. Beat lightly.
In a large bowl, mix flour, salt, baking powder, sugar, and lemon zest.
Gently fold in strawberries.
Pour milk mixture into flour mixture and stir together.
Fill muffin cups almost full.
Sprinkle sugar on top.
Bake at 375 degrees F for 25 minutes.
