Easy Blackberry Cobbler

We have been picking wild blackberries from the woods and freezing them.

Today I want to share an EASY recipe for blackberry cobbler.

Now I know there is much debate as to what constitutes a cobbler...

biscuit topping

streusel topping

pie crust topping

cake batter topping

So I did some research...
From what I found, I do believe the original cobbler was made with a biscuit topping.

OK, good to know right?
But that's not what I made (smile).

This Pioneer Woman recipe uses self rising flour and has proven to be a winner around here!
(I tweaked it just a tad)

It is so easy to assemble using a 1 cup - 1 cup - 1 cup method.

Here's what you need:
1 stick butter
1 1/4 cup sugar
1 cup self rising flour
1 cup milk
2 1/2 cups blackberries

Let's make it:
Melt the butter.
In a mixing bowl, whisk 1 cup sugar, 1 cup self rising flour, and 1 cup milk (that's the 1 c - 1 c - 1 c method)
Pour in the melted butter.  Whisk together good.
Pour the mixture into a buttered pie pan.
Add the blackberries all over the top.
Sprinkle 1/4 sugar over the top.
Bake at 350 degrees for one hour.

The self rising flour ends up giving it a 'cobblestone' look.

The berries have such a deep beautiful blackish purple color that exudes through and through.

Would you like ice cream with yours?
