Ham Carbonara

With Easter right around the corner, many of you may be having ham to eat, so I wanted to share this ham carbonara recipe with you.  Although I recently made this with packaged diced ham, it will be delicious with left over ham...I'm excited to make it again!

It's easy to put together and loaded with flavor.

Recipe for Ham Carbonara

Ingredients:
2 tbsp. olive oil
1 onion, diced
2 cloves garlic, grated
16 ounces spaghetti
1 cup diced ham
2 cups grated parmesan cheese
1 cup heavy cream
4 eggs
salt and pepper

Directions:
Cook pasta in boiling, salted water 8 - 10 minutes.
Heat olive oil in pan.  Add onion and saute until they start to caramelize, 10 - 15 minutes, stirring occasionally.
Add grated garlic, cook for couple minutes.
Add diced ham to onion and garlic mixture.  Heating through for a few minutes.
In a bowl whisk together parmesan cheese, cream, eggs, salt, and pepper.
Drain pasta.  Add drained spaghetti to onion mixture and toss together.
Stir in egg/cheese mixture until everything is combined.
Serve and enjoy!
