Mason Jar Peaches and Cream

Peaches and cream...YUM!

Peaches and cream served in a mason jar...extra YUM!
For presentation of course...not that the actual mason jar adds any flavor ;-)

You want the cream and powdered sugar to become just thick enough...not whipped topping thick.

I used white peaches to make this.
It was delicious, but the color of the peaches and the cream all blended together.
Next time, I think I will use yellow peaches for the color.

Vanilla wafer crumbs on the bottom and top.

Great to make ahead for...
dinner
cook-outs
reunions
packed lunches...

Mason Jar Peaches and Cream
(makes 6 half pint jars)

2 cups heavy whipping cream
1/4 cup powdered sugar
6 peaches, peeled and diced
30 vanilla wafers, crushed

Using a mixer, mix the cream and powdered sugar enough to become thickened, but stop before it's too thick.
Fold in the peaches.
Put vanilla wafers in a baggie and crush with a rolling pin.

Start with a layer of crushed vanilla wafers on the bottom of the mason jar.
Fill the jar the rest of the way up with the peaches and cream mixture.
Top with a sprinkling of crushed wafers.

Do you have any of these plastic freezer jars? They come in handy to pack this up for lunches (don't have to worry about the glass breaking).

On a side note...

If only our peach tree would produce some peaches...
Advice?
