Pumpkin Cookies

Pumpkin and spice and everything nice...
that's what these cookies are!

Pumpkin Cookies that taste like a pumpkin pie...yes, please!

I added homemade whipped cream, sweetened with a bit of powdered sugar for the 'icing'.
I love the smell and taste of nutmeg, so I added it to the cookie batter and sprinkled it on top.

I used canned pumpkin for these cookies, but if you made pumpkin puree, that would be wonderful in this recipe.

Pumpkin Cookies
makes about 2 1/2 dozen cookies

2/3 cup white sugar
2/3 cup brown sugar
3/4 cup butter, softened
1 teaspoon vanilla
15 ounce can pumpkin
2 eggs
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 1/4 cup flour

Pre heat oven to 375 degrees F.
In a large bowl, beat white and brown sugars, butter, and vanilla with electric mixer.
Beat in pumpkin and eggs until well combined.
Mix in baking soda, cinnamon, and nutmeg.
Slowly add the flour.

On ungreased cookie sheets, drop dough by heaping tablespoons.
Bake 10 to 12 minutes.
Cool on a cooling rack.

Another great pumpkin recipe that I like to make:

    1. I agree...these cookies would be good any time of year ;-) Thanks for the comment about the deck too...I think the cold is here to stay, so it's probably time to put the furniture away.
