Breakfast For Supper


I make breakfast for my girls most mornings before school.  It is usually something quick and easy, yet healthy that gives them a good start for the day ahead.  Because we have delicious fresh eggs daily, we eat eggs frequently.  We have breakfast for supper at least a couple times a month.  Making breakfast for supper gives me the opportunity to be more creative with eggs, because I have more time to make supper than I do to make breakfast on school mornings.    

This egg casserole recipe that I am sharing is a family favorite!  IF there are any left overs, it makes for a great lunch the next day.



First, peel and dice some potatoes (6 medium size).  Fry them in a pan with 3 tablespoons of vegetable oil.  When the taters are browned and slightly crispy, drain the grease and put them in a large mixing bowl.



In a seperate skillet, cook one pound sausage until brown.  I have made this using bacon instead of sausage and it is also delicious.



Using the pan that you fried the potatoes in, scramble one dozen eggs (whisked with 1/4 cup milk, salt and pepper).



Once the sausage and eggs are done, mix them together with the fried taters.  I also add green peppers for extra flavor.  (I always have diced bell peppers in my freezer.)



Spread into a 9 x 13 baking dish and put 8 ounces of shredded cheese on top.  I like to use a combination of sharp cheddar and monterey jack.

Bake at 350 degrees for 15 minutes or until cheese is melted.   



 You eat with your eyes first....Look at the beautiful colors in this.

Breakfast casserole
6 medium sized potatoes, peeled and diced
1 pound sausage
1 dozen eggs
1/4 milk
8 ounces shredded cheese - cheddar and/or monterey jack
salt and pepper
3 tbs. vegetable oil
handful of diced green bell peppers
salt and pepper

Fry the diced taters in 3 tbs. vegetable oil until browned and slightly crispy.

Cook the sausage in a seperate skillet until browned.

Whisk together 1 dozen eggs, 1/4 milk, salt and pepper.  Cook over medium heat, stirring frequently to scramble the eggs.

In a large mixing bowl, combine the fried taters, cooked sausage, scrambled eggs, and green bell peppers.

Transfer mixture to a 9 x 13 baking dish.  Put shredded cheese on top.  

Bake at 350 degrees for 15 minutes or until cheese is melted.

  1. Mmmm....I love breakfast food, any time of the day, any day of the week! We have always deemed Thursdays our "breakfast food night" where the whole family can expect to have breakfast food for supper :). Always looking for new breakfast recipes to try out. Thanks for sharing!

    1. Thanks for visiting Erin. Great idea to have a night designated for breakfast food. I TRY to plan a weekly menu...it keeps me on track and everyone knows what to expect (except when I change it) ;-)

  2. I just want to thank you for sharing! I made this today for breakfast and all I can say is Mmmmmmmm... Delicious... My son and myself had two big plates full! The only thing I changed is currently I don't have an oven that works, so I cooked everything like the recipe states and then for the oven part I heated my BBQ grill and placed the 9x13 pan on there for about 10 minutes... Yum!
